COOKIE OF MILK AND ICE CREAM OF VANILLA
Way of Presenting it

This is a very light and fresh dessert simultaneously that exquisite, of the newly Prize-winning Main Confectioner, Paco Torreblanca, and personally of his book, I believe that this is one of my favorite desserts!!!

Hands to the work and to be enjoyed, and I would like that if you do it and it salts you well, as to show you tell me how you have done it and if it has been difficult to you to do it very much.

COOKIE OF MILK

Ingredients:

* 100 gm. of glucose

* 1 liter of milk

PREPARATION OF THE COOKIE:

Put the milk to the fire, and when it is warm, add the glucose. Wave with a beater while it warms up. I joust when he begins to boil, stop beating and extinguish the fire.

The result is a very alveolate emulsion, which you must extend on an ovenproof role. Allow it to dry in the stove to 50th C for 24 hours approximately.

ICE CREAM OF VANILLA:

Ingredients:

* 570 gm. of whole milk

* 38 gm. of milk skimmed in dust

* 170 gm. of cream

* 30 gm. of egg yolks

* 160 gm. of sugar

* 2 vanilla branches

MAKING OF THE ICE CREAM OF VANILLA:

Mix the milk with the cream, add the branches and pulp of the vanilla, and to boil everything together one.

If you want that it has more flavor to vanilla, to leave it for one day in the refrigerator.

Once you have the infusion, to realize an English cream with the sugar and the egg yolks.

Next, to allow to cool the English cream in a receptacle covered with a role movie to skin.

When it is cold, to put it in the freezer.

PRESENTATION:

To cut rectangles of cookie of milk and also a band of ice cream.

To mount it like a sandwich. You can do infinity of things, since both the ice cream and the cookie can perform the flavor of which you like, and also you can play with the forms.

MY RECIPE ON THE ICE CREAM TO MAKE IT MORE RAPID
