STUFFED WRAPPED CHILDREN

STUFFED WRAPPED CHILDREN OF MUSHROOMS

Ingredients for 12 persons

24 escalopes of Stifle (or some similar cut, so that they could go out entire and lean)

30 grams of dry fungi

750 grams of fresh mushrooms

500 grams of onions

30 grams of butter

2 spoonfuls of parsley (cut fresh air)

24 (sliced) slices of streaky bacon (bacon)

3 oil spoonfuls

200 cc. of white wine (for kitchen)

1 Mustard spoonful

2 Cornstarch teaspoonfuls

250 grams of Cream (cream)

2 cups (250cc) of meat broth

Preparation

1st to Wash the dry fungi with cold water of the faucet (shin) and then to set them to dip in lukewarm water.

2nd to Wash the mushrooms and to cut them in tajaditas (rodajitas) not very thin.

3rd to Sting finite good two onions and rehogarlas (to put them in the frying pan until they remain translucent) in the butter.

4th to Add the mushrooms in the frying pan where we are cooking the onions and to attack them (it forms in that the mushrooms are cooked) on slow fire until they are cooked.

5th to Undo the mushrooms and the onion reserving the liquid.

6th to Turn the mushrooms and onion to the frying pan and to add half of the dipped and newly drained fungi.

7th to Season (to put salt and pepper) and to simmer until it is quite quite dry.

8th to Stretch the meat escalopes that (the butcher will have cut to us the most finite thing that had could) on a smooth surface and to season them.

9th to Place in every Escalope a sliced (track) of the bacon and then to cover it with the filling of the mushrooms, onion and fungi, and to reserve the surplus of the filling.

10th to Place superficially the parsley elegantly cut and to wind to (coil) holding with a toothpick.

11th to Warm the oil in a casserole, and to gild the wrapped children.

12th to Cut the rest of the onions in quarters and to add them to the casserole.

13th to Add the broth and the white wine and to cook to fire moderated during 45 minutes with the capped casserole.

14th to Add the liquid of the mushrooms that had been reserved and to cook 5 more minutes.

15th to Withdraw the wrapped children.

16th to Add the cream (cream) to the casserole and to keep on cooking to very slow fire, without leaving that he boils so that the sauce is thickening.

17th to Add, to the sauce the surplus of the filling of the mushrooms and the rest of the dipped fungi; if it is necessary to thicken with a bit of cornstarch (previously diluted in white wine)

18th to Return the children wrapped to the casserole and to cook during ten more minutes.

19th to Serve the children wrapped without the toothpicks, and to accompany with potatoes boiled to the native and dusted with cut parsley.

The approximate preparation time will be 30 minutes. The cooking Time is aprox 1 hour and a half.
