"RISOTTO OF MUSHROOMS ”
Ingredients
500 grams Arboreal Rice
50 grams Chive
75 grams Leek
100 grams Tomato Pear
6,5 deciliters vegetables Broth
Pronounced rice
- To cut the chives and the leek in small dice, to place them in an oil ladle and to fry slightly until they are transparent.
- To cut the tomato peeled in dice and to add the suffered previous one. To cook up to the entire evaporation of the liquid.
- In a ladle with ½ dcl of olive oil to mark the arboreal rice for all his sides, when the grain acquires a golden tonality; to incorporate the suffered one and the vegetables broth in boiling; and to allow to reduce until it has absorbed all the liquid.
- To have in badges with role sulfurizado and to cool (to cut the cooking). To reserve.
Vegetables broth
2 kg Carrot
2 kg Leek
4 kg Onion
2 heads Ajo
1 kg green Jewish women
2 kg Tomato
12 l Waters down
1 kg Turnip
3 dcl Refined Oil
- To cut the vegetables (less the tomato); to work fitfully in a ladle until they are well golden, to be scraping the fund, to add the cut tomato and to keep on scraping (this way with the water of the tomato we recover the maillar of the vegetables).
- Finally to wet with water and a trickle of soy sauce and to allow to cook approximately two hours in slow boiling. To tipple and to reserve.
Ointment
1 kg Butter
200 grams Cheese Cochineal Padano Rayado
150 gms It Cremates Balsamic
To take to point ointment the butter and to mix with the rest of ingredients, to cool, porcionar and to tipple.
Risotto
100 grams mushrooms Miscellany
C/S Broth of Vegetables
50 grams Ointment
200 grams pronounced Rice
Preparation:
- To place in a fire a ladle with the rice, the mushrooms and broth to heights (always the warm broth); when the grain of rice is asking, it is wetted of to little.
- When, on having proved the grain of rice, it is slightly made, and resists a little; it is the moment to emulsify with the ointment (always the ointment in small dice and well cold).
- It is left in rest of some or two minutes and makes use. Emplatado Colocar the risotto in a bowl with certain depth; above a few plates extra you die of cow smoke-dried meat.
- And superficially; supported in two rims of the bowl; to cross a mini focaccia tosta with cochineal padano superficially.
