CAKE (CAKE) FOAMS OF LEMON

CAKE (CAKE) FOAMS OF LEMON

INGREDIENTS:

For the bizcochuelo (sponge cake)

To prepare it with the recipe that I give of the inverted, alone bizcochuelo that you will have to do it with 3 eggs, 100 grams of Sugar, and 100 grams of Flour

For THE CREAM

 5 egg yolks

 Juice of 1 lemon

 200 grams of sugar

 Grating of 1 lemon

 5 clear raids to point snow you (last)

 20 grams of gelatine without flavor

 200 grams of whipped cream (cream)

 2 sugar spoonfuls glas (impalpable)

For the DECORATION

 Grated chocolate and Cherries to the native or Marraskino

PREPARATION

 For the cream;

 1st to Beat the egg yolks, with the sugar, and to add the juice of 1 lemon, the grating of the same lemon and the gelatine without flavor, diluted in the lukewarm liquid.

 2nd to Place to Bain-marie, (to place it in a bols, and on a cacerolita that has water necessary quantity so that it warms up but she does not boil) and to Beat with hand wire Mixer continuously. (Unless there is had the Thermomix, where it might do the same without having to put to the fire, simply setting it to cook in a level 4)

 3rd to Withdraw of the fire, and to place the bols, in another source so that it is cooling down. To incorporate the cream semi well-worn, and then the clear raids to snow, (or that are well well-worn)

ARMED WITH THE CAKE to Place the sponge cake in a mold, desarmable, and to dampen with a brush with water so that it becomes alienated with major facility and above to place the lemon cream.

 To stop enfríar, well, until it hardens. To cover with whipped cream (it cremates chantilly) or simply to cover with the grated chocolate and in the wings, the candied cherries, or to the native.
